Based in Northern Ireland, Jim has built a hugely engaged community around great food, outdoor cooking, travel and his unmistakable sense of humour. What started with a passion for backyard BBQ has grown into a platform that takes Jim from his purpose-built outdoor kitchen to restaurants, road trips and food destinations around the world, always with good food and good company at its heart.
In 2026, Jim released his debut cookbook, How to BBQ Everything, which became an immediate Sunday Times Bestseller. With years of experience in the UK and Ireland BBQ scene, Jim is also an accredited Kansas City Barbeque Society Judge and has demonstrated at major food events including Tom Kerridge’s Pub in the Park.
Alongside his wife Rom, who has become a familiar part of Onlyslaggin, Jim is increasingly bringing travel, outdoor living and shared experiences into his content.
